Chocolate Mug Cake

There are times I just NEED chocolate. I know I’m not alone in that. And sometimes I don’t have it in the house (which should be illegal). And, in Sweden, it’s not possible to just run out at any time at night and find a place to buy chocolate. And one day I came across something called a “mug cake.” Cake in 5 minutes? Oh dear…

I found a Chocolate Mug Cake recipe online and after a little tweaking it turned out to be EXACTLY what I needed for the occasional I-need-something-chocolate-now-or-I-will-explode episode.

The best part is that this recipe is eggless. So if it turns out to be slightly undercooked you don’t have to worry about raw egg. And also? If it’s slightly undercooked it ends up being a bit gooey which is, frankly, WONDERFUL.

Recipe:

INGREDIENTS
3 Tbsp - All Purpose Flour
1 1/2 Tbsp - Cocoa powder
3 Tbsp - Powdered Sugar (I have also used light baking syrup instead which works fine)
1/4 tsp - Baking Powder
1 1/2 tsp - Vanilla Sugar OR 1/4 tsp - vanilla extract
a pinch of Salt
1 1/2 Tbsp - Cooking Oil
3 Tbsp - Milk
Chocolate Chips to throw on top (optional)

INSTRUCTIONS
Mix all the ingredients in a medium sized mug. (When cooking, the cake will almost double in size, so the cup shouldn’t be more than half full before baking) Keep beating the mixture with a fork until mixed well and fluffy. Throw on some chocolate chips if you have it. Microwave on high for around 1 min +/- 10 sec (depends on micro. Usually I wait to see the cake just about double in size).

Serve immediately while it’s hot! Serve with ice cream or whipped cream if available. 

Note: As soon as you take it out of the micro it WILL start to shrink. So don’t panic if you see that it’s become less than double in size once you’re set to eat it. It will still be delicious!
